Let's face it, we all think we make the best salsa in the world. Spices, heat, textures, it's all a matter of personal preference. But I'm here to tell you, I have found the holy grail of salsa recipes. This is not your typical salsa recipe, this is the freshest and best salsa you will ever taste. Believe me, I've tried them all.

INGREDIENTS:

- 2 tablespoons Extra Virgin Olive Oil

- 20 Tomatillos, husked, halved

- 1 Tomato, cut 1/2

- 6 cloves Fresh Garlic

- 1 Red Bell Pepper, cut 1/2, no seeds

- 2 Yellow Onions, peeled, cut 1/2

- 3 Jalapeno Peppers, cut 1/2

- 1/2 cup Cilantro, washed

- 1 tablespoon ground Cumin

- Sea Salt and freshly Cracked Pepper to taste

METHOD:

  1. Put all ingredients in a thick bottom pot.
  2. Cook over medium heat until very soft, stirring occasionally. About 20 minutes.
  3. Let cool a little, then blend in a food processor or blender and season with salt and pepper.
